as there's always the question of "what to do to get what" :
quests that give only experience +1ws,+1bs,+1i (up to maximum of 5-6) or +1ld (up to maximum of 9) should be about easy.
means defeating 3-10weak-medium NPCs.
quests that give expierience and some other boni like +1s,+1a (up to a maximum of 4-6 depends on character and other stats "strengh contra attacks") or +(1)t (toughnesbonus but not counting against instawounds) or +1ld (up to a maximum of 10) or additional -1sv to a weapon (up to a max of 2) should be about medium.
means defeating 15-20weak NPCs and/or 3-10medium NPCs and a medium bossNPC (St5,To5,Wo2/3,At4-6,WBB/Bionic or something similar)
quests that give +1t ,better armorsave by 1 (up to a save of 3+), 5+ or 6+ invulnerabilitysave or similar saves or weapons wounding on 2+/3+/4+ ,prior roll boni , "fearless" and similar should be hard.
means defeating 3-10medium NPCs and 2-6harder NPCs and a hard bossNPC (st5-7 or wounding on 2+/3+,To5-6,Wo3-5,At5-7,3+/4+Inv and/or WBB/Bionic/IgnoreWound or something similar)
quests that give +1w ,4+invulnerabilitysave, armorsave upgrade up to a 2+armorsave or similar, "always strikes first" , "autobacks" are categorized as HARD AS HELL and should at least have a 50:50 chance of DEATH and that means result 11-16 on injurytable,not just failing the quest.
quests that improve parryrolls ,give additional wounds up to 4 or more,2+Inv or similar are about impossible and should only be asked for if the character is supposed to die,only try to get such a quest approved if you don't care if your character dies or if your character should definitely die, he'll sure will die in 9 out of 10 tries to do that quest,such quests will unclude penalties for failing the quest from 1-3autoinjuries up to instant death (like 11-16on injury table).
quests that reanimate a dead character or bring it back in any other way after it already died are not possible.
hope that helps a bit, no stat is fix,means the borders between the different categories are shifting,depends all on GM. but nothing more than 2 border should be "expanded" means a bonus for category "hard as hell" can't be gain for a task for category "easy".
these are not fix rules, but informations to help players and gamemasters.

RESURRECTION/REANIMATION and similar quests
to bring a dead character back to the living
are NOT POSSIBLE and will never ever get approved!
DEAD means DEAD,DEATH means DEATH.
if you really want your character to come back,because you maybe put a lot of work into the fluff, make a new character and bring your old character in this way back by fluff.
but a dead character IS DEAD!
